Yummy, Chocolate Chip Cookie Recipe

I’m sharing a recipe that I throw together when I want a sweet treat. My children even like them! Once you reduce your sugar intake your taste changes for the better – and overly sweet things just don’t taste as yummy. This cookie dough is mild and not really sweet – the sweetness really comes from the delicious dark chocolate chips!

Preheat your oven to 350 degrees. Take 2 cups of oats and blend it up – yup, that’s what I said. Make ya’ some “oat flour”.

Next, in a mixer (or use a whisk or wood spoon or spatula or whatever you have☺️) add about 1 cup of peanut butter, 2 capfuls of pure vanilla extract, and 2 tablespoons of room temp butter. Mix well. Add in 2 eggs (you could probably get away with one, but do 2 if you can) and 1 cup of Stevia. Mix together again. Now throw in the 2 cups of oat flour you made and about 1 1/2 cups of almond flour. *Optional: If you’d like to kick it up a notch you can add in a tablespoon or two of plain whey protein powder as well. Mix everything together, adding in about 1 cup of dark chocolate chips as you stir it up. I suggest you get your hands in there and “knead” it like dough to incorporate the chips well….it’s good for you😉

Last, roll them into balls (you can leave them in balls or you can gently tap them down so they flatten just a bit) ensuring the chocolate chips are ‘evenly’ dispersed as best as you can in each cookie. Bake for 10 minutes, depending on your oven, until they are light brown.

Take them out of your oven when done, and leave them alone until cooled. After cooling, I like to cover mine and keep them in my refrigerator. The flavors come together and the texture is also better in my opinion….but you can eat them however you like of course!
